Strawberry Madness, Day 1

Today began the manifestation of my vow to eat all 64 oz. of strawberries that I bought before they go bad.

The first concoction that I whipped up is my twist on strawberry shortcake.

Strawberry Shortcake

  • 1box of angel food cake mix, baked
  • 2 cups sliced strawberries
  • 1/8 cup of sugar
  • 1 cup cream whipped with a mixer (mix with 1/4 cup confectioner’s sugar on high until peaks form)
  • chocolate syrup (optional)

Bake up one box of instant angel food cake using directions on the box.  Meanwhile, combine strawberries and sugar, and allow to set for a few hours in the refrigerator.  Once the cake has cooled and strawberries have set, slice cake into squares and plate.  Top the slices of cake with the strawberry/sugar mixture and add a dab of whipped cream.

Tip:  Spoon the juice that forms from the strawberries and sugar over the cake and drizzle chocolate syrup over the plate.

Mmmm, mmm, MMM! Tasty.

Check in tomorrow to see what I’m planning for breakfast.

If I lived in New York, I would make you my cooking slave. Just saying. That looks amazingly amazing, by the way.
