Today began the manifestation of my vow to eat all 64 oz. of strawberries that I bought before they go bad.
The first concoction that I whipped up is my twist on strawberry shortcake.
Strawberry Shortcake
- 1box of angel food cake mix, baked
- 2 cups sliced strawberries
- 1/8 cup of sugar
- 1 cup cream whipped with a mixer (mix with 1/4 cup confectioner’s sugar on high until peaks form)
- chocolate syrup (optional)
Bake up one box of instant angel food cake using directions on the box. Meanwhile, combine strawberries and sugar, and allow to set for a few hours in the refrigerator. Once the cake has cooled and strawberries have set, slice cake into squares and plate. Top the slices of cake with the strawberry/sugar mixture and add a dab of whipped cream.
Tip: Spoon the juice that forms from the strawberries and sugar over the cake and drizzle chocolate syrup over the plate.
